Bun In the Oven

As I wait for baby to decide when he would like to enter this world I have been trying to keep my mind off just how long I have been pregnant and how big my belly is, so I have been on a bit of a baking spree.  Which now come to think about may not be helping my big belly situation!

It started simply enough with a good old easy gluten free chocolate chip cookies. I used this recipe a few times and they always turn out well. I'll admit I would like to try and find a recipe that is a little more like "normal" chocolate chip cookies but for now this will do.....................So I was going to link the recipe here................I swear I had it on my pinterest board...............but now I can't find it!!! Looks like next time I make cookie I will have to use a new recipe!

Well the cookies apparently were not enough to entice baby to come on out! So I made blueberry muffins! These are always a big hit in my household, when the girls learn that there are muffins in the house that is all they ask for. And then there is Mike who will eat 3 or 4 at one sitting!!! And yet still no baby!!! Click HERE for the link. PS I don't use use Bob's Red Mill blend, I use Cloud 9 gluten free all purpose baking flour, because that is what they sell at costco.

So like I said baby didn't wanted to come out for any blueberry muffins but he was send me some vides that he might come out for some lemons.......first I tried a frozen raspberry lemonade slushie (not baking I know) and although it was yummy it immediately gave me really bad heartburn so much so I couldn't even finish my drink!

But I still felt like baby was needing something lemon so I made some lemon bars.  Way back when I was young and single I went through a big lemon bar kick. I would make them all the time! The more lemon the better! So I thought I would I would give it a go and try and try a gluten free version. I used THIS recipe. For the first time making them gluten free I think they turned out pretty good. Not as good as I would have liked. I'm thinking that make I should try a different flour blend I feel like that will make a difference for next time.

BUT even after giving him all the lemon he wanted he was not coming out of his comfy little "man cave"

So then I made something I have never made before and something I never thought I would want to try baking, orange rolls (like cinnamon roll, but with a super yummy orange filling) Here is the backstory on why, seeing as I was not pushing out a baby I went to an ladies activity put on by the church I go to. It was a retro theme were they taught a little bit about some super homemaking things, baking bread and hemming. Well the hemming kind of went over my head, but now I know who I can talk to when I need some help. But I did get into the baking bread, mostly I think because it smelled so delicious as they were baking it. And of course it tasted even better!!! I pretty much fell head over heels in love with the orange rolls. I want some more so badly that I decided I would try and find a gluten free recipe that was not super complicated. I found THIS one. Which turned out to be pretty good! I'll be honest I didn't have high hope mostly do to my baking skills (baking gluten free bread is scary to me!!!) and the fact it can be difficult to find a good gluten free bread recipe, so to get a good one the first time around was pretty amazing! A few notes I used Cup 4 Cup flour blend and I for next time I give these a go I'm going to roll them thinner.

Here is the recipe for the orange filling I used - 1/2 cup of soft butter, 1/2 cup of sugar, and 2 orange rinds grated. Mix well and spread over dough.

Here is the recipe for the cream cheese icing I used - 2 cups of icing sugar, 8oz. of cream cheese, 1/2 cup of butter and 1tsp of Vanilla.

You can see I should have rolled the dough thinner.

And of course I pretty much drown them with cream cheese icing, sooooo good! 
And yet after all the baking, still no baby!!!! Well his days on the inside are numbered so he will be here soon enough.
